Black Cake.

Here's my recipe for black cake. A traditional cake made throughout the Caribbean during Christmas time. Some refer to it as rum cake or Christmas cake but the fundamentals for all are the same. Soaked fruits in alcohol, usually rum, baked then soaked again! Absolutely delicious. Get started on this one in time for Christmas. Full tutorial below via YouTube.

Ingredients

For the fruit mix:

500g Raisins 250g Sultanas 125g Mixed peel 125g Dried Cherries 250ml Dark Rum or Sherry

For the cake mix:

450g Butter 450g Dark brown muscovado sugar 9 eggs 1 lemon, zest 1 orange, zest 1 tsp vanilla extract 1 tsp almond extract 300g plain flour 2 tsp baking powder

To make the browning: 4 tbsp Molasses or treacle 4 tbsp dark rum
